Can get the plate off easily by sliding it, but how the hell do you all put it back on?! I try to bring it close to the edge so I can slide it back on but the magnet just attaches to it and then I end up snapping the plate with my skin in between. Help!!

set the plate on the table and hold the magnet over it (be sure to hold as far back as possible) or drop the plate on top of the magnet with the ends of the U facing up. that tends to be my preferred
I would not reccomend the drop/ pull it onto the magnet from a distance. Hold the plate in one hand and the magnet in the other. Attach the plate to one side of the U of the magnet, then rotate it until it meets the other side of the U. If you control it to attach to only one side of the U first, you can keep your fingers clear of pinching and give yourself plenty of extra area to hold onto both the plate and the magnet.
You can also achieve the same effect by pressing the plate onto a flat surface with one hand, leaving half hanging off and then bringing one side of the U magnet (technically one pole of it) in contact with the plate side sticking out, then rotate completely.
Please accept my horrible drawing as guidance.

I protect my hands with a towel when sliding the plate off or putting it back on.
Have it facing like how you do in the picture. Put the metal plate on a flat surface away from anything else, then lower the magnet slowly down onto it and will snap into place.
I put one edge of the plate on the magnet from side to side on its side. Then I just push it over, it is a lot less scary to do it that way. Just the edge doesn’t snap as hard as the whole plate onto the magnet.
